Text Box: At this point, you could start tearing into the crab like most folks and get some of the meat and a lot of the shell! However, since YOU have the incredible Crab Stikä , we are going to now pick this crab using the Crab Stikä system where you can get ALL of the meat and virtually no shell! So, let’s get started.

 

 

 

Text Box: (E) Each one of these cuts will actually be made with 3 short cuts because of the curved body shape. You want to cut down and then push away from the body. This will pull all of the tendons with the knuckles as shown in the photo (F) below on the right. Repeat this on the other side. Set the legs and claws aside for later. We purists even like to get the sweet meat out of the legs.
Text Box: I always start by breaking off the claws right at the body. That just makes handling the crab much easier. We are going to cut the crab in 4 places to prepare it for picking. I like to use a sharp knife with a stiff blade for this. (D) The first 2 cuts are to get rid of the legs and claw tendons. We want those tendons out of the meat. All they do is make it difficult to get the meat. You accomplish this by taking your knife and cutting just inside the knuckles as shown by the dotted lines.

Text Box: When you get through cutting, you should have one whole body piece as shown in (G) below left. It will have a raised part on each side and thin in the middle. For the last 2 cuts, we will hold the body on its edge and slice off the raised part as shown in (H) center. Right photo (I) shows raised piece cut off. Repeat for other side.
